Bau Truong to Bring the Flavours of Old Saigon to Harbord Diggers

Established nearly 30 years ago from a foundation of traditional flavours with a twist, Vietnamese restaurant, Bau Truong is ready to bring sugar, spice and all things nice to Harbord Diggers when they open their doors in July.

Fast becoming the Northern Beaches’ mecca for good food and good company, Bau Truong represents the Diggers’ latest offering. It follows in the footsteps of the successful AcquaFresca by Pilu and Teddy Larkin’s Seafood and Steakhouse restaurants, as well as DD Collective café that are located at the iconic Freshwater venue.

From humble beginnings in Cabramatta and now with three other restaurants across Sydney, Bau Truong has gradually become synonymous with quality, refined Vietnamese dining, boasting flavourful mains, exotic entrees, elegant desserts and a selection of cultural beverages.

“We are very excited to offer our Northern Beaches community the chance to taste and fall in love with the authentic cuisine delivered by Bau Truong,” said Mounties Group CEO, Dale Hunt.

“Bau Truong is a decades-old Cabramatta institution with no big-name chef or flashy cooking methods. Instead it has a loyal fan base that considers it one of the best places to get a home-style Vietnamese meal in Western Sydney.

Bau Truong is inspired by and endeavours to deliver the authentic taste of Vietnam, taking diners on an aroma-fuelled journey through a traditional Saigon marketplace.

Specialty dishes include golden Fried Soft-shell Crab in a Fruit Tamarind Sauce and Double-boiled Five-spice Duck in a rich Oyster Sauce, while those with a sweet tooth simply must try the Banana Spring Roll or the Jackfruit Shake.

Bau Truong owner, Michael Thai says his mother, Bac Cang Nghieu, aged in her mid-70s, will be the driving force behind the new menu, and they will make several local adjustments from their other offerings at Cabramatta, Darling Square and Mounties.

“The delicacies served at all Bau Truong restaurants are safely guarded recipes which stem from the fond childhood memories of my mum, a Vietnamese migrant,” explained Michael.

“Her strong desire to perfect recipes inspired by her memories of old Saigon and her grandmother’s cooking, is what stimulates Bau Truong’s success.

“We are excited to be part of Harbord Diggers and bringing authentic Vietnamese food to the Northern Beaches,” he added.

Bau Truong is anticipated to open at Harbord Diggers in late July.

“Bau Truong has long been popular in Western Sydney and Mounties club, and I have no doubt it will be embraced just as strongly here in Freshwater with its modern take on its Vietnamese classics,” added Mounties Group CEO Dale Hunt.

“Once Bau Truong establishes itself inside Harbord Diggers, I believe we will boast the best variety of restaurants on the Northern Beaches. It will further cement us as a state-of-the-art venue for any occasion or age,” he concluded.
